Bragging on the Kids


MIDLAND, NC - Border collies are said to be smart. If given a challenge a bright border collie will amaze me every time.

As part of my multi year out of pocket, pay as I go renovations we decided to fence the area that divided the house and guest house. A great deal of the fence is in the wooded area for the dogs to run free and enjoy themselves.

Close to the structures we have more ornate fencing. And finally on the deck we have a very nice gate with a latch.

Tanner has already figured out how to open the latch and let himself out. I saw him do it yesterday.


Finally I have to brag once again on my hens. First sunny side up eggs I have done in a long time.

I love smart dogs. Not all of them are. My sister's bulldog is not smart. She thinks she's a cat. When I sit in the living room chair, the dog climbs first on my lap, then to the back of the chair to lay across my shoulders.

Your eggs look good! I love sunny side up!

How do you do yours?

I usually flip them for about 5 seconds to lock in the yolk and finish cooking the whites on top, but presentation of that is poo.

This morning I tried finished them by adding a drop of water and a lid to steam them. The yolks cooked through completely and I almost threw my plate through a wall.

I use a non stick pan with a glass lid. Preheat it on medium high until water sizzles when you splash a few drops. Then crack whole eggs in the pan and add just enough water to steam them. Maybe a few tablespoons. Cover and let them steam. Usually I wait until the yoke has just changed color. That way it is still soft and the white is done. This makes perfect sunny side up eggs. No grease or oil added.
