It had to happen. No successful endeavor can go on perfectly without a failure. We learn from failures.

I was tripped by a herding border collie upon completion of these beautiful stuffed butterfly shrimp. The pan fell face down. The stuffing provided a soft pillow of protection from the floor.

I salvaged the shrimp sans the stuffing and proceed to have grilled shrimp rather than stuffed shrimp.     

It was wonderful.

My Hammock

Yesterday I tried out my hammock and it worked like a charm. It was easy to set up and take down and darn comfortable.

Prune Beach on Prune Bay, St Croix.

This beach is a real beach I go to. I am usually the only person there. There are coconut trees galore that I can tie my hammock ends so that I could theoretically take a nap under coconut trees on a tropical island. I will in 196 days.

No Blog Today

I will not be blogging today because I have to drive down to the NC coast and back all in a day. So I don’t have time to talk about diving, football, dog shit, BBQ, chickens, dogs, dreams, Jeeps, St Croix, the weather, small boats, football, pizza, golf, or anything for that matter.

Words

I don’t like the word savory. It is a fake cover up word to disguise something that is going to taste bad. Much like the term “vegetable medley” …you just know it going to be some over cooked crap veggies.

Please don’t use the term preggers around me. It sounds like a praying mantis may be stuck sideways in a vagina. Just say pregnant.

Work Place


At work I spend a great deal of time on the computer, most of which is sitting on my ass at a desk. So I decided it might be a good idea to stand a bit for general health and to burn a few calories.

wReggie’s wRich Cellared Preserves


About 10 years ago Gigi and I went on a preserves kick where we filled a double cabinet with Peach preserves (SC peaches the best, first of the season), Strawberry preserves (local) and Blackberry preserves (local farm raised).  

After 10 years we still have these preserves but magic of aging has brought out the deep richness of the fruit and has totally transformed the taste to the positive.

I opened this jar of peach preserves this morning and the color has assumed a dark almost apple butter color. Soooo good.

It makes me want to put up a giant batch next summer just to cellar like fine wine.

A New Dream Format for me to Enjoy

Something very new happened last night in a dream. I was all suited up for scuba and dove in the air above ground. So I was just floating about like I was underwater but had to keep breathing from my tanks to make this work. It was really fun floating at the tree tops or going over highway overpasses.


Yesterday was hot and I was outside a lot doing yard chores and cooking a pork butt. By the time it cam time for me to eat the heat kicked in and I became nauseated and couldn’t finish supper that I had been working on for 12 hours.


But the darn thing is in the refrigerator for enjoyment this week. I feel much better this morning after lots of water and a good night sleep.

Things Happen to Old Stuff

Friday morning I took Gigi to a kidney specialist. When I started my truck I heard an unfamiliar sound. As loud and clankey as a Ford diesel is, it does make predictable noises.

When I put it in gear I could feel the brakes and steering wheel had lost their hydraulics.

Fortunately my mechanic makes house calls and he suspected a broken hose. It was.

After the repair we exchanged eggs, vegetables and money and the deal was done. He grows the best tomatoes in cow and horse shit. And my truck was fixed.

It seems something is going on with her kidneys or possibly something else is making her kidney function abnormally. At any rate she will have to put off surgery until this is cleared up.

Goings On

Since the NFL lockout didn’t get resolved I decided it was time for a review of what is happening at the farm.

It is hot as Ned’s ass. 98 and 100 are commonplace but the rest of the country is cooking too so tough titties. Buck up and deal I guess.  

I continue this Weber cook-a-thon with spun chicken with lemon and rosemary just last night. A bit of hickory smoke blended it all together and it was divine. Some sliced home grown tomatoes and cucumbers with vinegar and egg noodles rounded out that feast.

 I bought a Boston Butt on sale for $1.69 a pound and it will get some kind of low and slow cook with hickory this weekend.

Somehow the Weber has been therapeutic dealing with stress of Gigi’s on again off again surgery schedule. I am loving learning to cook between hot spots and warm spots and blending smoke and flavors.  

Gigi’s surgery has been cancelled indefinitely until we resolve her low sodium problem. It may be kidney problems so that is where we are headed this morning to a kidney doctor.

My “baby” chickens started laying yesterday. 5 little eggs total. I had not expected them to lay for another month.

Like last summer I have my truck fully loaded to dive at the quarry at a moments notice. It is fun to be able to take a few hours, dive, get refreshed, have a few beers and grill with friends. This dive quarry PDRA is really a nice respite and great facility.

Finally the Jeep. I have not had the top off this season mainly because if I do I will have to get a new roof. I barely buttoned it up last fall and knew the time would come to replace the roof. So I’ve been driving when it isn’t so hot but I need to buy a roof and toss this old one.

Plus the Jeep needs a new muffler.

Oh please, please, purty please…great spirit of football. Let today be the day that the foolishness stops. Let today be the day that church bells ring in Thanksgiving.

We fans have suffered long. There has been nothing to talk about except DWIs and retirements. No mini camps, trades, deals, trash talk, no injuries, no nothing.

Yet I have honed my tailgate skills in hope and respect for the game.

I cannot imagine fall without you NFL.

For a Dozen Eggs

I trade for fresh home grown vegetables from my neighbors and yesterday this nifty pile of hickory wood from my cabinet maker neighbor.

This wood will do just fine this winter in my smoker and pizza oven.

A Nice Sunday for a Dive

Dive 56 is in the books and it was back at The Quarry.

The last quarry dive I did was January when I did my dry suit dives. Since then I have logged 24 dives all in the warm pristine waters of St Croix.

Quarry rats as they are called hanging out to dive and dine. 

Yesterday it was back to putting on a bulky wet suit, hood, gloves, then getting in the water to don my mask and fins when at the final count the strap on my mask snapped.

I wasn’t about to abort this dive after going through the trouble of suiting up so I held my mask to my face the entire dive.

The water was cold below 20 feet. I felt like I was diving in a sleeping bag after being used to wearing just a bathing suit and tee shirt in the warm water dives.

But again this builds experience for the easy dive.

The primary purpose of this dive was to finally checkout and use my redundant pony bottle back up air system.

A Distant Memory


Behold...the best wings every made.


Honest to goodness these were the best wings I have ever eaten…. spicy (not hot) smoky, sweet and tender.  

I washed and seasoned them with lemon pepper, Miss Anna’s Caribbean Shake, Basil, and garlic powder.

Then I seared the wings for a few minutes on direct charcoal heat. After browning both sides I moved them to the opposite side for indirect cooking. I added two lumps of hickory wood to smoke them and shut the lid.  

The sauce was made with Franks Hot Sauce, butter, molasses, honey, maple syrup, and garlic.

After 20 minutes I rearranged the wings a bit for even cooking and returned the lid for another 20 minutes.

Gigi does not like HOT spicy so I cut the Franks with butter and sweetness. The Miss Anna’s was used sparingly and it added just enough kick.  

The wings were good naked but the sauce was too good to turn down.

No celery or salad dressing for these wings. That is for girly men anyway.

What Happened?

The weather got nice yesterday. It went from 100 degree highs to 70 but that caused the wind to kick in and that causes big swells off shore and that causes boat trips to be cancelled. So no diving today...8 foot seas.

Gigi and I elected to stay home and vacation. I decided it would be fun to take another run at fire cooked pizza. This is a learning process. 

Two things I have learned, it takes a lot of wood to maintain the heat and second, I need a recipe for a thin pizza crust.

So Many People Just Don't Get It

Either you like the finer things in life or you don't. It is like properly rigging your boat or knowing the etiquette on the golf course. It's like calling the President "Mr. President" out of respect for the office, even if you think the guy is an idiot.  

And so, here is the proper basic foundation of a table setting. She did not address the blade of the knife which I personally have a strong opinion on. I was taught "blade out" and think it looks better.

Deal Done!


The sea was angry my friends but I pushed on through the storm and made the pizza. Onion, mushroom, and green pepper.


I added wood chunks and got the oven past 700 degrees. What came of it was darn near perfection. Perfect crust (sorry I doubted you Betty Crocker), wood fired flavor, moist toppings all golden brown.

Wood Fired Pizza! Almost


This is what I got today. It was easy to put together and no tools required. It looks sturdy and well thought out.


The accessories are top quality, a nice stone, peel, and cooking or serving pan.


Okay I went cheap cause I wanted to get my first one off. Dough mix, jar sauce, cheap wine, but I promise to never go cheap again. 


Then the bottom fell out and I was punished by the Pizza gods for buying Betty Crocker Dough and Canned Sauce.

Plan B


Yes, I have a plan "B".

Only weighs 1 pound with tooth brush and paste … I now have my overnight lodging whether caught in an airport, The Shack, on some beach in the Caribbean or just a snooze in the yard. It is being stowed under the back seat of my truck for emergencies. Add a blanket and tarp and you have high class homelessness.

Weekend

I am really getting stoked about this coming weekend.

As you know Gigi’s spine surgery was postponed and now is scheduled for the 25 of July. This is the surgery that will rebuild her spine.

We decided to take a quick road trip to the NC coast. We are headed to Wrightsville Beach, NC.

Our plan is to arrive Friday and stay at a local Mom and Pop Hotel at the Marina.  They allow dogs so we are taking the two oldest.

Nearby are three restaurants/bars within walking distance that get decent reviews for local food.

Just beyond is the boat I will be catching Saturday morning for an all day off shore dive to Ed’s Lobster Wreck (Porta Allegra on Map).


The dive site is 50 miles off shore in 120 feet of water. It is said to be loaded with life that includes spiny lobster and lion fish. I’ll be going after both.

The challenges are many. The boat ride alone will be 5 hours at best. I don’t know these people like I do in St Croix although Aquatic Safaris has a good reputation for safety. I don’t know the crew or the other divers I will encounter but can assume a decent level of experience since we are diving depth.

I will be taking my 30 CF pony bottle out for the first time. This is a complete redundant system in case my primary system fails or in case I go into decompression mode from the deep water and need to spend 15 minutes just breathing air to equalize the gasses to a safe level in my body.

An unexpected decompression stop occurred to two divers I was with in St Croix and enough air became an issue. I personally try to be more careful but one never knows.

Oh and for fun I am dragging along the Jeep so Gigi can have the truck and I’ll have a vehicle.

An NC Dive

I am going here next Saturday weather permitting.

The site is 46 miles off shore of North Carolina and is an old dredge that was headed to help dig the Panama Canal but sank on the way down from Maryland. 

It is loaded with lobsters and Lion Fish. I am taking a snare and gun.

NEWS YOU CAN USE

The smoked pork was so good last night that it made grown men weep. It had a distinct infusion of hickory flavor and a real smoke ring to boot. It was moist and oh so tender.

The Duke Hunnicutt Poultry Institute (TDHPI) has been rather quiet concerning its new class of 2011. I can tell you that all 16 hens are about adult size now and are filling out. They should be producing eggs in about 6 weeks.

In addition TDHPI is pleased to announce the addition of a new observatory adjacent to the main facility. This area will be open roofed yet secured with protective wire. It is now known as The Yard. It has state of the art roosts and feeders and will soon attach directly to the main facility via a portico.

BBQ Is On!

I woke up naturally at 4 AM and decided now was as good of time as any to try out the new smoker attachment on my new Weber.

So Haley and I headed into the damp darkness and filled the cooker with 48 briquettes, and I lighted 12 briquettes separately to get the fire started. I then added the hot briquettes to the pile along with some hickory wood and water.
 Then the Boston Butt went on.

The temperature is holding steady at 240ish which is a tad hot so I cut back on some air supply.

I check it every hour and add some water and knock off the white ashes to keep the fire going.

It is 7 AM now and this thing looks so good.

I’ll leave it on another three or four hours.

On a positive “Made in USA” note my other grill after 8 years began to weaken at a spot weld. I called Weber last night and they are going to replace the entire cooking dome free.

I welcome my 4th Weber grill to the family. It is a 22.5 Kettle Charcoal Grill that will accept all the new accessories I have bought….rotisserie, slow cooker and soon to have pizza oven.

This time I decided to adopt a rescue Weber from Craig’s List. Here is what I got if I bought new:

This Pizza Oven add on get to 700 degrees and works with my Weber. It is on order.


This Smokenator 1000 came in yesterday. It cooks steady at 230 degrees and uses moisture.

I Was a Pirate for a Night

Back in September 2009 my pal Ty and I sneaked away to St Croix for a week of snorkeling (pre-dive wReggie), hiking, swimming and general rest and relaxation.

Officially I was there to donate and help install hardware for a web cam at the Pickled Greek, which I must say is running to this very day.  I used an old outdated office computer and a new web cam along with some free software. Michael synched up the software to the server and the rest is history.

Lastly I was also there to install a vent in the kitchen to help alleviate some of the intense heat. 

Being the peak of hurricane season the weather was iffy most of the week with tropical depressions, squalls and heavy thunderstorms.

The weather forced us inside on occasion and what better place than one of the many island bars.

One night we ducked into Angry Nate’s on the Boardwalk for a nightcap and sat at the bar that was shaped like a giant U.

We had our drinks and were talking when we both became annoyed at the increasingly loudness of our fellow drinkers at the bar. Suddenly a big dark haired fellow burst out on a long, funny, vile Pirate limerick that ended with a loud Arrrrrr and cups being pounded on the bar.

It was like I was in a Disney movie.

Pirate Mike as he introduced himself claimed he was writing a book of Pirate limericks and went on into the evening with one after another never repeating himself.

At the end of every limerick we would all be a Pirate and pound the bar and scream arrrrrh!

We finally called it a night late after being thoroughly entertained.

On subsequent trips I would run into Mike sober and he was mild mannered and no fun, or he was so drunk his breath smelled like vomit.

Little did I know that for once that dark stormy September night I caught Mike with the perfect storm of buzzes to produce a night of Piracy.
    
I caught up with Mike’s whereabouts back in June while visiting the island. It seems Mike had sold his sailboat and moved to Florida and basically given up the Pirate life.  

What a night that was and the memory lives on.

Epic Cheeseburger

Gourmet burgers are all the rage. I ate this one last month in St Croix.  

Yesterday I indulged in some summer eatery second to none. I fired up the gas grill to high heat and made some hamburger patties from ground chuck.

Fresh home grown tomatoes sliced, Colby jack cheese, lettuce, sliced onions and by golly a perfectly cooked cheeseburger thick and moist. I was tempted to add a fried egg on top but didn’t.

I used a press so the burgers were uniform in size and fit the standard bun perfectly.

So good it was that I ate two. I never do that so maybe that’s why I did it.   

At the grocery store there was ground pork next to the ground chuck. Would this have been better? Maybe…..I’ll have to try.

Perhaps a thin smear of Miss Anna’s New West Indies sauce to spice it up….next time.

My Soapbox on Money

I know more than a few folks with money and more than a few folks without money who are obsessed by money. Both seem equally miserable contemplating wealth.

Those that have it, and are obsessed, are afraid they’ll loose it, for what I don’t know. The source of happiness and pleasure is between ones ears….same for those who don’t have money.

Honestly if you put these people in a room you couldn’t identify the wealthy from the non wealthy. But you would notice the same attitude about money.

Those with or without are slaves to money.

I don’t get it.

Friends, relationships, kind works, love and family are wealth. It doesn’t take money to have this and money will not enhance this.

Tee for Four

It is kind of weird. Normally this morning I would be waking up at Jekyll Island, GA in site E6 with all the familiar smells of campfires, bacon and coffee. The dogs would be a bit confused and excited to be back.

But this year we are home awaiting surgery for Gigi with no regrets.

Today I play another round of golf. I swear I may have to give it up because I play so bad and infrequently.

The small group I played with regularly a few years back just quit playing and so did I. It was fun playing with a group that had equal skills and personalities.

We all shot decent scores of 99ish which isn’t bad for a group of hackers. My best games were 89 and 93 a few years back.  

Most folks I play with now are strangers and are serious about the game so it not so fun for either of us anymore.  

But today I am playing with 3 out of four of the old gang so it should be a lot of fun.
